Lemon Verbena Passover Kugel


An artistic expression of my Lemon Verbena plants, and a delicious recipe I'm serving for Passover tonight. I baked it in muffin tins for cute little individual servings:

Lemon Verbena Veggie Kugel
1 cup grated carrot
1 cup grated apple
l cup grated potato
1/2 cup raisins
1/4 cup brown sugar OR honey
1/2 cup matzah meal
2 handfuls dried or fresh Lemon Verbena
1/2 tsp cinnamon
2 eggs
1/2 cup olive oil

Blend eggs, olive oil and Lemon Verbena in blender. 
Combine with all other ingredients. 
Bake in oiled muffin tins 45 min at 350 degrees.
